December 23 12月, 2024 Ayurvedic Thali – Pumpkin Curry December Ayurvedic Thali - Pumpkin Curry Ingredients: 1.4 tsp oil1 bay leaf1 tsp cumin / jeera¼ tsp methi / fenugreekpinch hing / asafoetida2 chilli, slit1 tsp ginger paste600 grams pumpkin / kaddu, cubed¼ tsp turmeric1 tsp kashmiri red chilli powder½ tsp coriander powder½ tsp garam masala¾ tsp salt½ cup water1 tsp jaggery1 tsp aamchur / dry mango powder2 tbsp coriander, finely chopped Instructions: Firstly, in a large kadai, heat 4 tsp oil and saute spices.Also, saute 2 chilli and 1 tsp ginger paste until it turns aromatic.Further, add 600 grams of pumpkin and saute it for 2 minutes.Additionally, add spice powder and ¾ tsp salt.Saute for 2 minutes until the spices are well combined.Add ¼ cup water, cover and cook for 10 minutes stirring in between.Cook until the pumpkin is cooked well.Now add 1 tsp jaggery, 1 tsp aamchur and ¼ cup water. mix well and Cook until the pumpkin absorbs all the flavour.Finally, add coriander and enjoy kaddu ki sabzi with roti.
